Homemade Cajun Seasoning

My husband LOVES 15 bean soup with cajun seasoning, and I love to make it because it's super easy and healthy.  You soak some beans (15 different kinds to be exact), boil the beans, add a little packet of seasoning and some chopped onions, and enjoy.  You can even add some sausage or tomatoes to change it up.  It's also a very frugal option, and it freezes well.   

A few months ago my husband requested 15 bean soup, so I gladly agreed.  However, as I was about to dump the package of seasoning into my huge pot of beans, I realized that I had no clue what was in it.  So, I decided to read the package.  Here is what I found: Hydrolyzed Soy Protein, salt, artificial flavorings, and silicone dioxide (more commonly known as sand).  I was not happy with myself!  Since I know the benefits of homemade anything, and since I already make my own taco seasoning, I decided to attempt my own cajun seasoning. Can I just say that it was delicious!  My husband even noticed a difference and mentioned how much better it tasted.  
This seasoning can be added to any soup or dish that you wish to have a cajun flavor.  You can add more or less cayenne pepper to make it hotter or milder.

What you'll need:

2 1/2 tsp paprika 
1 1/2 tsp chili powder
5 dashes cayenne pepper (or less if you don't like it very hot)
1/4 tsp pepper
1/4 tsp oregano
3/4 tsp thyme
1 tsp salt 

What you'll do:

Mix all ingredients together in a small bowl.  Add to any soup or dish.  This seasoning is great just sprinkled on top of vegetables or to season meat.

This recipe is easily doubled or tripled.  I like to keep a large batch of it to have on hand when I want it.  If you are making a large batch, then you will use approximately 2 Tbsp per serving.

  1. I've found the cajun mix that comes with the beans triggers a headache for me...
