Homemade Whipped Cream Recipe {And Giveaway Reminder}

I grew up making homemade whipped cream pies for my grandfather every year for his birthday.  This was a tradition started my his own mom when he was just a boy.  You see, he was born in 1919 and lived through a tough time, but his momma always made him that whipped cream pie each year.  Unlike my great-grandmoher, I use a mixer for this recipe.  I tried just using a whisk the first time, but that lasted about 15 minutes and then I had to break out some backup!

I still make this pie for my Poppaw every December; this year will mark his 94th birthday.  He's so frugal that he takes one slice and freezes the rest to eat throughout the year.  

This recipe has changed some as I've started living a more natural lifestyle, but it's still just as good and just as simple to make.  I have included several variations of ingredients that you can use to suit your family's needs.  Enjoy!

What you'll need:
2 cups heavy whipping cream, raw heavy cream, or other full fat cream
1-2 tablespoons sucanat, raw honey, or other sweetener 
1 teaspoon pure vanilla extract or homemade vanilla

What You'll do:
1.  Place cream in a medium bowl and mix on high speed until thick.
2.  Add sweetener and vanilla and mix on high speed until well incorporated and until stiff peaks form.  Do not over mix or it will become too thick.  A general rule is to dip a spoon in the whipped cream and turn it upside down.  If the cream falls off then you need to mix it longer.  If it stays on the spoon you have mixed it long enough.  
3.  You can use this on top of pancakes, waffles, pies, cakes, cookies, etc.
